Bacon Cheeseburger Macaroni Recipe

I know this combination probably sounds a little weird (hubby was nervous the first time, too!) but this recipe has quickly become a family favorite. It is something I invented a few months ago when trying to come up with something to make for dinner and Doodle wanted pasta and Sugarplum wanted a cheeseburger. Smash them together and what do you get? Bacon Cheeseburger Macaroni!

It’s a special treat because I rarely give the kids macaroni and cheese. It’s partly due to Doodle’s dairy issues but also because I don’t consider it a complete meal but don’t really see it as a side dish either. It’s sort of a “limbo” meal to me and I’m never quite sure where to put it! Maybe it’s because I only had it growing up when my mommy was gone so it seems like a non-meal meal.

But I also always get fancy macaroni and cheese when I see it at restaurants  adding meat to it and a salad or other good veggie on the side makes it feel more like a real meal.

Bacon Cheeseburger Macaroni Recipe:

Ingredients

  • 1 box creamy style macaroni and cheese (or a batch of your favorite homemade version)
  • 1/2 pound ground beef
  • 2 slices bacon
  • Salt and Pepper
  • Ketchup
  • Mustard

To prepare

  1. Prepare macaroni and cheese per the box directions.
  2. Brown the ground beef with salt and pepper to taste.
  3. Chop the bacon slices into small pieces and pan fry just until pieces start to brown and crisp around the edges.
  4. Combine macaroni and cheese, seasoned beef and bacon.
  5. Serve and top with ketchup and mustard.
