Free Pumpkin Carrot Cupcakes"},"content":{"rendered":"<p>I had some fresh pumpkin left after Halloween and the girls wanted to make hubby a cake for his birthday (November 4th).\u00a0 Hubby likes carrot cake (though it&#8217;s not my favorite) so I thought a\u00a0pumpkin carrot cake was the perfect birthday treat.\u00a0 I adapted a standard recipe to be dairy free for Doodle and I was pleasantly\u00a0surprised by how dense and moist the cupcakes turned out despite the batter being much runnier than a typical carrot cake and it is soooo delicious, too, especially topped with my dairy free <a href=\"https:\/\/www.beyondmommying.com\/blog\/2014\/11\/10\/dairy-free-maple-spiced-frosting\/\">Maple Spice Frosting<\/a>!<\/p>\n<p><a href=\"https:\/\/www.beyondmommying.com\/blog\/wp-content\/uploads\/2015\/11\/pumpkin-carrot-cupcakes.png\"><img loading=\"lazy\" decoding=\"async\" class=\"aligncenter size-full wp-image-9450\" cake flour<\/li>\n<li>3\/4 cup brown sugar<\/li>\n<li>1\/3 cup coconut oil<\/li>\n<li>2 eggs<\/li>\n<li>1 cup pumpkin puree (fresh or canned, not pumpkin pie filling)<\/li>\n<li>1\/3 cup maple syrup<\/li>\n<li>1 teaspoon baking soda<\/li>\n<li>1 1\/2 teaspoon baking powder<\/li>\n<li>1\/2 teaspoon salt<\/li>\n<li>1 1\/2 teaspoon baking spice (or pumpkin pie spice or a blend of your favorite spices&#8211;cinnamon, nutmeg, cloves, cardamom, etc.)<\/li>\n<li>1 cup grated carrot<\/li>\n<\/ul>\n<p>Preheat oven to 350.<\/p>\n<p>Combine brown sugar, oil and eggs.\u00a0 Mix until well-integrated and smooth, scrape sides of bowl (this mixture sticks much worse than when creaming sugar and butter).<\/p>\n<p>Add pumpkin and syrup, scrape sides of bowl.<\/p>\n<p>In a separate bowl combine flour, baking soda, baking power, salt and spices.<\/p>\n<p>Slowly add dry ingredients to wet, mixing on low just until combined.<\/p>\n<p>Fold in grated carrot.<\/p>\n<p>Grease cupcake tin or use paper\/silicone liners and fill 3\/4 full with batter.<\/p>\n<p>Bake 12-15 minutes or until toothpick inserted in middle of cupcake comes out clean.<\/p>\n<p>Top with Dairy Free <a
