\/><\/a>Ingredients:<\/h4>\n<ul>\n<li>1 medium butternut squash<\/li>\n<li>4 chicken breasts<\/li>\n<li>4 apples<\/li>\n<li>1 tablespoon cinnamon<\/li>\n<li>1 cup apple juice<\/li>\n<li>2 tablespoons Olive Oil<\/li>\n<li>1 small onion, diced<\/li>\n<li>2 cups arborio rice<\/li>\n<li>4-6 cups chicken broth<\/li>\n<li>1 teaspoon Nutmeg<\/li>\n<li>\u00bc cup maple syrup<\/li>\n<\/ul>\n<h4>To Prepare:<\/h4>\n<p>1) Peel and cube squash.\u00a0 Set aside 1 cup and cook the rest until soft and puree<\/p>\n<p>2) Slice and core apples (peel if you\u2019d prefer) and place around chicken in a large skillet with cinnamon and apple juice.\u00a0 Cover and simmer until chicken is cooked through<\/p>\n<p>3) Heat olive oil and cook onion until soft<\/p>\n<p>4) Add rice and stir until covered with oil and slightly toasted<\/p>\n<p>5) Add uncooked squash and nutmeg<\/p>\n<p>6) Add \u00bd cup broth at a time, stirring constantly, adding more broth each time pan starts to get dry<\/p>\n<p>7) Continue adding broth and stirring until rice and squash is tender<\/p>\n<p>8) Add 1 cup pureed squash<\/p>\n<p>9) Remove chicken and apples from pan and add maple syrup, cook until sauce is
